Tropical Grilled Chicken Skewers

Hawaiian Chicken Skewers

Skewers (aka kebabs) are a summer staple.  This version will kick your classic version up a notch by adding your choice of tropical fruit to the mix!

INGREDIENTS

1/4 c. extra virgin olive oilHawaiian Chicken Skewers

1/3 c. low sodium soy sauce

1/4 c. honey

1 tsp. minced garlic

salt and pepper, to taste

1 lb. boneless skinless chicken breasts cut into 1 inch cubes or pieces

2 red, green, and/or yellow bell peppers cut into 1 in. pieces

1 pineapple or 3 mangos, cut into 1 in. pieces

1 red onion, cut into 1 in. pieces

Wooden or Steel Skewers

Optional: Grape or Cherry Tomatoes

Place all pre-cut chicken, veggies, and fruit in a gallon-sized plastic bag and set aside.

In a small size bowl, whisk together the rest of the ingredients (olive oil, soy sauce, honey, minced garlic, and salt & pepper).  Pour mixture over chicken and veggies in bag, seal, and place in refrigerator for at least one hour or up to 8 hours.

If using wooden skewers, soak in cold water for at least 30 min. prior to grilling.  Preheat grill to medium high heat.

Thread the chicken, vegetables, and fruit onto the skewers.

Cook on grill for 5-7 min. on each side or until chicken is cooked through.  Serve immediately.
