Ingredients: 

– 4 cups saucer peaches, peeled, pitted, and chopped 
– 2 cups granulated sugar 
– 1 tbsp lemon juice 
– 1 tsp vanilla extract (optional) 
– 1 sprig of fresh thyme (optional, for a subtle herby note) 
 
Instructions:

– Combine peaches, sugar, and lemon juice in a saucepan. 
– Cook on medium heat until simmering, then reduce to low. 
– Simmer 15-20 minutes, stirring, until thickened. 
– Add vanilla and thyme (if using) for the last 5 minutes; remove thyme. 
– Cool slightly, jar, and store in the fridge for up to 2 weeks. 
 
Tip: The flat shape of saucer peaches makes them easy to peel and chop, and their natural sweetness shines in this simple jam!
