Pear-Apple & Gouda Savory Galette

A golden, flaky pastry, layered with orchard-fresh pears and apples, paired with creamy, smoky Gouda is as beautiful as it is delicious. This mouthwatering galette is an irresistible balance between sweet and savory, making it the perfect fit for any occasion.  

Ingredients 

  • 1 round of pastry dough (homemade or store-bought pie crust) 
  • 1 ripe pear, thinly sliced — we recommend D’Anjou pears for their subtle citrusy flavor 
  • 1 crisp apple, thinly sliced — we recommend Fuji apples for their juicy sweetness, which creates the perfect texture when paired with the other ingredients 
  • Smoked Gouda, thinly sliced or shredded 
  • Optional flavor enhancers: 
  • A handful of toasted walnuts for crunch 
  • Fresh thyme, mint, or rosemary for color 
  • A drizzle of honey or balsamic glaze for added sweetness 
  • A dash of nutmeg or cinnamon to finish it off 

Instructions 

  1. Preheat & Prep 
    Heat oven to 375 °F. Line the baking sheet with parchment paper. 
  1. Roll Out the Crust 
    On the parchment, roll dough into a rustic 12-inch circle. No need for perfection, those imperfect edges are part of the charm. 
  1. Create the Orchard Layer 
    Fan alternating slices of pear and apple in the center of the dough, leaving a generous 2-inch border. Sprinkle Gouda over the fruit so it melts into every crevice. 
  1. Fold & Frame 
    Gently lift the dough edges over the filling, pleating naturally to form a free-form crust that frames the fruit.  
  1. Bake to Golden Bliss 
    Bake 30–45 minutes, until the pastry is golden brown, the fruit is tender, and the cheese is bubbling. 
  1. Finish with Flair 
    Let rest for a few minutes. Drizzle with honey or balsamic glaze, sprinkle with fresh herbs, and, if desired, dust lightly with nutmeg or cinnamon. Slice and serve warm or at room temperature. 

Serving Suggestion: Pair with a peppery arugula salad and a glass of sparkling cider. Perfect for summer picnics, weekend brunches, or as an appetizer!
