Get into the holiday spirit with these adorable Cherry Linzer cookies! Filled with sweet cherry jam and sprinkled with powdered sugar, they’re the perfect festive treat to share while gathering with loved ones and enjoying cozy holiday moments by the tree.
Ingredients
- 2 cups all-purpose flour
- 1 cup almond flour
- 3/4 tsp fine sea salt
- 1 cup unsalted butter, room temperature
- 2/3 cup sugar
- 1 tsp vanilla extract
- 1 egg •zest of 1 lemon
- Powdered sugar, for dusting
- Cherry Jam for filling (we love our Dark Sweet cherries to make this jam; check out our HarvestClub™ where you can get a different fruit each month, including our favorite cherries)
Method
- Mix all-purpose flour, almond flour, and salt.
- Beat butter and sugar until fluffy. Add vanilla, extract, egg, and zest, then mix.
- Combine wet and dry mixtures.
- Shape dough into a disk, wrap, and chill for 30-60 minutes.
- Preheat the oven to 350°F and line a baking sheet.
- Roll dough to 1/4-inch thick. Use a circle cookie cutter, or our favorite is a biscuit cutter (2-3”) to cut out each cookie. On half of the cookies, use holiday-themed cookie cutters to cut out a shape in the center of the cookie (tree, snowflake, stocking, or our favorite, a pear).
- Bake for 11–13 minutes until golden.
- Cool completely on a wire rack.
- Dust the cut-out cookies with powdered sugar (on top on the outside), spread jam on the inside of the plain cookies, and sandwich together with the powdered sugar cut-out cookies.
