Ingredients:
- ½ cup (1 stick) unsalted butter
- 1 cup semi-sweet chocolate chips or chopped chocolate
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup all-purpose flour
- ¼ cup unsweetened cocoa powder
- ¼ tsp salt
- 1 ½ cups pitted and halved fresh dark sweet cherries
- Optional: mint sprigs for garnish
Directions:
1. Preheat & Prepare Pan:
- Preheat oven to 350°F (175°C).
- Line an 8×8-inch pan with parchment paper or lightly grease it.
2. Melt Butter & Chocolate:
- In a medium saucepan over low heat, melt butter and chocolate until smooth.
- Remove from heat and let it cool slightly.
3. Mix Wet Ingredients:
- Stir in sugars, then beat in eggs one at a time.
- Add vanilla and mix until glossy and smooth.
4. Add Dry Ingredients:
- Sift in flour, cocoa powder, and salt. Fold until combined.
- Gently fold in most of the cherries, reserving a few for the top.
5. Bake:
- Pour batter into prepared pan and smooth the top.
- Press remaining cherries gently into the surface.
- Bake 30–35 minutes or until a toothpick comes out with moist crumbs.
6. Cool & Serve:
- Cool completely in pan before slicing.
- Garnish with fresh mint or serve with whipped cream or ice cream.
