Ingredients:

  • 2 lbs (900g) tangerines (8–10 medium)
  • 1½ cups (300g) sugar (adjust to taste)
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger (optional, for warmth)
  • Zest of 1–2 tangerines
  • A small pinch of ground cloves (optional, for deeper spice)

Optional Add-Ons:

  • 1 vanilla bean (or 1 tsp vanilla extract)

    Instructions:

    1. Prep the tangerines:
      • Peel and segment tangerines.
      • Remove seeds and as much white pith as possible.
      • Chop finely or pulse in a food processor.
    2. Cook the jam:
      • In a saucepan, combine:
        • Chopped oranges
        • Orange zest
        • Lemon zest and 2 tbsp lemon juice
        • 1 cup water
        • All the spices (add star anise or whole cloves now if using)
      • Bring to a gentle boil over medium heat, stirring often.
      • Lower heat and simmer for 30–45 minutes, stirring regularly.
    3. Optional:
      • Add vanilla extract at the end of cooking.
      • Use an immersion blender for a smoother texture if desired.
    4. Test for doneness:
      • Place a small spoonful on a cold plate.
      • If it wrinkles when pushed, it’s ready.
    5. Jar it up:
      • Spoon into sterilized jars.
      • Refrigerate for up to 3 weeks, or water bath can for 10 minutes to store longer.

    Serving Ideas:

    • Spread on toast or croissants
    • Swirled into yogurt or oatmeal
    • As a glaze for ham or roast chicken
    • A holiday gift in decorated jars!
