Refreshing Blueberry Spritzer Recipe on The Fruit Company Blog

Blueberry picking time is in full swing here in the Pacific Northwest. From early July through early September, we’re eating blueberries straight off the bush, by the bowl, and incorporating them into our favorite recipes.

In this summer heat, it’s so important to stay hydrated, and we love finding new (and healthy) ways to stay refreshed.  This sweet blueberry spritzer is the perfect way to cool down after a hot summer day.

To start, we use our fresh Mountain Blueberries to make delicious simple syrup.  Then combine the syrup with club soda and fresh lime juice, and save a few of the fresh blueberries to top it off.  It’s the perfect way to stay cool and hydrated by the pool, on the deck with friends, or relaxing after work.

Blueberry Lime Sprtizer

Ingredients
  • 1/2 cup sugar
  • 1 cup fresh [url href=”http://www.thefruitcompany.com/gourmet-gifts/harvest-club/harvestclub-americana” target=”_blank” title=”Blueberries in the Americana Monthly Fruit Club from The Fruit Company.com”]blueberries[/url]
  • 2 limes
  • 1 cup club soda
Instructions
  1. Place sugar and 1 cup water into a medium saucepan over medium heat. Stir until the sugar has completely dissolved. Add the blueberries and bring to a boil. Reduce heat to low and simmer for 5 minutes. Strain mixture through sieve or cheesecloth and set aside liquid to fully cool.
  2. Juice 1/2 of a lime per glass. Slice the remaining half of the limes and place in the glasses. Fill the glass with crush ice. Pour 1/2 cup of club soda into each glass. Add 2 tablespoons of blueberry simple syrup into each glass. Give it a good stir and taste. If you like it more tart, 2 tablespoons will be perfect. For a sweeter spritzer add 1-2 more tablespoons of blueberry simple syrup.
