Ingredients
For the Crust and Topping:
- 13 tablespoons unsalted butter, softened
- 1 cup sugar
- 2 cups all-purpose flour
- 1 teaspoon salt
- Reserve 1/2 cup of this dough for the crumb topping
For the Blueberry Filling:
- 4 cups blueberries (fresh or frozen)
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
- 2 Tbsp of Flour
- 1/2 cup sugar
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
- Make the Crust:
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add flour and salt; mix until combined and crumbly.
- Press all but 1/2 cup of this mixture evenly into the bottom of your prepared baking dish to form the crust.
- Set the reserved 1/2 cup aside for the topping.
- Prepare the Blueberry Filling:
- In a medium bowl, combine blueberries, lemon juice, cornstarch, flour, and sugar. Stir gently to coat the berries evenly.
- Assemble:
- Spread the blueberry filling evenly over the crust.
- Crumble the reserved 1/2 cup of dough over the top of the blueberries.
- Bake:
- Bake for 40–45 minutes, or until the top is lightly golden and the filling is bubbling.
- Cool and Serve:
- Let the bars cool completely in the pan before cutting into squares. For clean cuts, you can refrigerate for 1–2 hours before slicing.
