Ingredients
- 1 pkg. Puff Pastry
- 1 cup almonds
- 1/2 cup brown sugar
- 1/2 stick unsalted butter
- 2 tsp. salt
- 1/2 tsp. cinnamon
- 3 Organic pears, peeled, cored, and halved (our favorite is Bosc)
- 6 oz. Brie cheese (rind intact)
- Egg wash (1 egg and 2 Tbsp. water, beaten)
Steps
- Preheat oven to 400°F.
- Toast almonds in a dry pan. Once almonds are cooled, process in a food processor with brown sugar, butter, salt, and cinnamon. Process until a smooth paste is formed. Set aside in refrigerator.
- Next, unroll the refrigerated puff pastry on the enclosed parchment paper and cut the dough into 6 pear shapes. Use the excess trimmings to make 4 leaves and cut with a knife.
- Cut the brie into 6 chunks that will fit into the hollowed-out cavity of the pear where the core once was. Then fill the pears with the almond mixture and add a chunk of brie cheese, and lay the pear cut side down onto the pastry. Roll edge of pear-shaped dough to keep brie in form while baking.
- Brush the pastry with egg wash. Bake for 20-30 minutes until golden brown.
