Raita, is a yogurt style dip combined with radishes, cucumber, and mint. Served alongside some toasted naan or crackers it makes a wonderful meal or an easy appetizer. This recipe is just a foundation for raita, there are many varieties, combining cumin, cilantro, and red pepper flakes. The only ingredient that is necessary for raita is a quality greek yogurt.

Raita with Crispy Naan

serves 6

Raita
1 cup of plain greek yogurt

1 roma tomato diced

1 English cucumber, peeled, seeded and diced

1 Serrano chili pepper, seeded and finely diced

1 bunch of French Breakfast radishes, trimmed and finely diced

1/4 cup roughly chopped mint

1 bunch of green onion, trimmed and thinly sliced

Juice of 1/2 lemon

1 tablespoon white wine vinegar

sea salt and freshly ground pepper

 

In a medium size bowl, combine all ingredients. Taste and adjust seasonings, possibly adding additional Serrano chili pepper, lemon juice, vinegar or salt and pepper. Chill until ready to serve.

 

Naan

1 package of fresh naan

1 tablespoon olive oil

large pinch of flaky sea salt

Preheat oven to broiler setting. Cut naan into serving size pieces. Brush olive oil on and place right onto the oven racks. Bake only for 1-2 minutes. Promptly remove and sprinkle with flaky sea salt.
