Apple Pizza

Apple Pizza

It has been awhile since we have posted a dessert recipe to the blog and newsletter, and with October being National Apple Month, we decided to go with a slight twist on a familiar flavor. There is nothing more well-known than good old fashioned Apple Pie, and our Apple Pizza hits all the same notes. While a little more portable, the Apple Pizza is filled with luscious tart Granny Smith Apples, brown sugar, cinnamon and other recognizable flavors.

We’ve mentioned in several recent posts that we try all the recipes we put on the blog, and this month was no exception. In fact we wanted to share some of the images of our employees chowing down on this delicious dessert. This isn’t just a job for us; we genuinely have a passion for fruit, and exploring all the ways fruit can be used is a real treat. It also helps us serve our customers better providing valuable insight into which fruit will make the perfect gift for any occasion.

Making the Apple Pizza is straight forward, although a little time consuming. You could skip on the homemade pizza dough, but that would cut out some of the authentic flavor. If you keep everything organized you should be fine. The ingredients are easy to find and the directions are very straightforward. Just be sure you choose a tart apple like a Granny Smith so that the flavors and textures stay balanced. Bake until golden brown and enjoy!

Ingredients

  • 2-1/3 to 3 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 package (1/4 ounce) active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 1/4 cup milk
  • 1/4 cup butter, cubed
APPLE TOPPING:
  • 4 cups sliced peeled tart apples
  • 2 tablespoons butter
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon

CHEESE TOPPING:

  • 4 ounces cream cheese, softened
  • 1/4 cup packed brown sugar
  • 2 tablespoons caramel ice cream topping

STREUSEL:

  • 2/3 cup all-purpose flour
  • 1/3 cup sugar
  • 1/4 cup cold butter, cubed

Preparation

1. In a large bowl, combine 1-1/2 cups flour, sugar, yeast and salt. In a saucepan, heat water, milk and butter to 120°-130°. Add to dry ingredients; beat for 2 minutes. Stir in enough remaining flour to form a firm dough. Turn onto a floured surface; cover and let rest for 15 minutes.

2. Meanwhile, in a large skillet, cook and stir apples in butter over medium heat for 2 minutes. Combine the sugar, flour and cinnamon; stir into skillet. Cook 3 minutes longer. Reduce heat to low; cook, uncovered, for 4-6 minutes or until apples are tender, stirring frequently.

3. In a small bowl, combine the cheese topping ingredients. For streusel, in a small bowl, combine flour and sugar; cut in butter until crumbly.

4. Pat dough onto a greased 14-in. pizza pan, building up edges slightly. Spread with cheese topping, then apple topping. Sprinkle with streusel. Bake at 375° for 20-25 minutes or until crust is golden brown. Serve warm or cold. Yield: 10-12 servings.

Administrative Professionals Day

For all those long hours, dedication, and as a recognition of great work and appreciation, the country celebrates Administrative Professionals Day. Since 1952 this holiday has been honoring office workers across the country for the work that they do.

Its has developed into a great way of showing thanks to those you work with or employ. Showing your gratitude is as easy as speaking a few words of appreciation, or giving a  fun gift that will brighten a day if not a week. Traditionally the entire week is spent showing your coworkers appreciation. Office parties, Donuts, Gift Baskets! All are great ideas. Here are just a few gifts we think anyone will enjoy from The Fruit Company! Read more

Curried Cashew, Pear, and Grape Salad

This sweet and tangy harvest salad is a true delight.

INGREDIENTS

  • 3/4 cup cashew halves
  • 4 slices bacon, coarsely chopped
  • 1 tablespoon melted butter
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon curry powder
  • 1 tablespoon brown sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper
  • Dressing:
  • 3 tablespoons white wine vinegar
  • 3 tablespoons Dijon mustard

  • salt and black pepper to taste
  • Salad:

In a large, dry skillet over medium-high heat, toast cashews until golden brown, about 5 minutes. Remove cashews to a dish to cool slightly.

Return skillet to medium-high heat, cook bacon strips until crisp on both sides, about 7 minutes. Remove bacon with a slotted spoon, and soak up grease with a paper towel. Coarsely chop bacon, and set aside.

In a medium bowl, stir together butter, rosemary, curry powder, brown sugar, salt, cayenne pepper, and toasted cashews. Set aside.

In a small bowl, stir together white wine vinegar, mustard, and honey. Slowly whisk in olive oil, and sprinkle with salt and pepper to taste.

In a large salad bowl, toss dressing with greens, pear slices, grapes, and bacon, and sprinkle with nut mixture.

Seasons sweep over me

A nice poem of the season for the poetry lovers out there.  Enjoy!

With the crisp in the air

The cold in my hair

a better sense of season

The season sweeps over me

Letting go of the green

I embrace the color of winter seen

Taking in the smell of leaves

Change sweeps over me

To the trees now quite bare

To the flowers wilted fair

Warmth of chimney soon to be

Winter and fall sweep over me

Family life and Holiday

Travels food and skies dark grey

All lead to the hope that soon

Another season will sweep over me.

An Afternoon in the Orchard

There is nothing more peaceful here at The Fruit Company, than taking a stroll through the Webster Family orchard.  As soon as your feet move from the hot pavement on to the soft grass you instantly sense the change of environment.

The rows stretch on for quite a bit.  Everywhere you look are gorgeous Webster Royal Comice pears, still young and basking in the warmth of the summer sun.  If you stop you can hear the sounds of the wind rustling through the short bushy leaved branches, keeping you cool as you take in the view.  Towering above, sits Mt. Hood.  Her year round snow covered peak adds a beautiful backdrop to the already splendid environment.

And then the hard part, stepping out of the quietness and back to the hustle and bustle of the busy world.

Blazermania Restored!

Here in the Great Northwest there is only one professional sports team that has been endeared to the City of Portland and the State of Oregon. The Portland Trailblazers. There is something to be said for the red, white, and black emblem that has brought the city to its feet over the years creating the hype and hysteria that is known as BLAZERMANIA!
Growing up in Dallas Oregon I was fortunate to watch live and on TV, the greatness that was Clyde “the Glide” Drexler.brandon-roy Watching as he and his cohorts, Buck Williams, Kersey, Uncle Cliffy Robinson, and the unforgettable Duckworth, as they defended the Western Conference against the likes of Isaiah Thomas and the Pistons, and of course, Michael Jordan and Scottie Pippen’s Bulls.
Growing up in the era we witnessed agreat example of what a team could be. Sadly it took quite a few years and a rough crowd of “Jailblazers,” to get us back on track with drafting the “right” type of players. It’s great to see a team that is growing up together. While sometimes there weakness, the fact that they are all young and learning that game while succeeding together has been great to watch happen.
For the past two years the have surpassed expectations even with, what some might say, setbacks. While they are currently down 3-2 in a best of seven series, they are quietly becoming a west coast force.
So tonight, no matter the outcome, they played a great season and have nothing to regret. They have brought back Blazermania and given us a quality skilled team to cheer on!
